Garlic Ginger Chicken Salad
Our Garlic Ginger Chicken Salad will be the hit of any gathering! When topped with crunchy Lo Mein noodles and chopped green onions, this recipe has color, texture and incredible taste! Worth the effort.
- 6 Cloves Garlic, minced
- 4 Tablespoons Grated Fresh Ginger
- 1 Tablespoon Hot Chili Paste
- 1 Cup Rice Vinegar
- 1 Cup Brown Sugar
- 1 Pound Chicken Breast, cooked & cubed
- 1 Bunch Green Onions, chopped
- ½ Cup Mayonnaise
- Lo Mein Noodles
To prepare the dressing, in a small saucepan, whisk together garlic, ginger, chili paste, vinegar, and brown sugar. Bring to a boil over medium heat, stirring constantly. Remove from heat. Strain and retain residual garlic and ginger. Cool completely.
Mince the residual garlic/ginger on a cutting board. Divide the cooled dressing into two equal portions in small bowls. Put half of the minced garlic/ginger in each bowl. Add mayonnaise to one bowl and whisk.
In a large bowl, toss chicken with mayo/garlic/ginger dressing. The remaining dressing can be served on the side to be drizzled over the top of the salad. Garnish with crunchy lo mein noodles or sesame seeds.
